East African Chicken in Coconut Sauce

Description

A rich and flavorful chicken dish cooked in creamy coconut milk and spices, perfect for family gatherings.


Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups coconut milk
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 12 green chilies, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil in a large pot and sauté the onions, garlic, and ginger until fragrant.
  2. Add the ground cumin and coriander, and stir well.
  3. Add the chicken pieces and cook until browned.
  4. Pour in the coconut milk and bring to a simmer.
  5. Cover and cook until the chicken is cooked through, about 30-40 minutes.
  6. Stir in lime juice and season with salt.
  7. Garnish with fresh cilantro and serve.

Notes

Serve with steamed rice or warm naan to soak up the sauce. Fresh salads can also balance the richness of the dish.
