- 1 pound chicken breast, diced
- 1 cup bell peppers, chopped
- 1 cup zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1 cup tzatziki sauce
- 1 cup rice (uncooked)
- 2 cups chicken broth
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, combine the diced chicken, bell peppers, zucchini, cherry tomatoes, rice, and tzatziki sauce.
- Pour the chicken broth over the mixture and season with salt and pepper.
- Drizzle with olive oil and mix everything together until well combined.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
- Garnish with fresh parsley before serving. Enjoy!
