Ingredients

  • 1 pound chicken breast, diced
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup tzatziki sauce
  • 1 cup rice (uncooked)
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine the diced chicken, bell peppers, zucchini, cherry tomatoes, rice, and tzatziki sauce.
  3. Pour the chicken broth over the mixture and season with salt and pepper.
  4. Drizzle with olive oil and mix everything together until well combined.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
