A delightful fudge combining rich dark chocolate and sweet cherries, perfect for any occasion.
Ingredients

- 2 cups dark chocolate chips or chopped dark chocolate
- 1 can sweetened condensed milk (14 ounces)
- 3 tablespoons unsalted butter, cut into pieces
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 1/2 cups dark sweet cherries, pitted and halved, well drained and patted dry
- 1/2 teaspoon flaky sea salt, plus more for sprinkling
- 1 tablespoon unsweetened cocoa powder (optional for dusting)
Instructions
- Prepare the Baking Pan: Start by lining an 8×8 inch square baking pan with parchment paper, leaving an overhang on two sides. Lightly grease the parchment with cooking spray or a bit of butter.
- Prepare the Cherries: Take your dark sweet cherries and drain them very well. Use paper towels to pat them completely dry.
- Melt Chocolate Mixture: In a heavy-bottomed saucepan, combine the dark chocolate and sweetened condensed milk. Place the saucepan over low heat and stir constantly until melted.
- Add Butter: Once melted, add the pieces of butter into the warm chocolate mixture and stir until fully incorporated.
- Flavor It Up: Remove from heat and stir in the vanilla extract and almond extract if using, along with the flaky sea salt.
- Fold in the Cherries: Gently fold in about 1 1/4 cups of the prepared cherries into the chocolate mixture.
- Pour and Spread: Pour the fudge mixture into the prepared baking pan, spreading it evenly.
- Decorate: Press the reserved cherries gently on top of the fudge.
- Sprinkle and Dust: Sprinkle a pinch of flaky sea salt over the top and dust with cocoa powder if desired.
- Chill: Place in the refrigerator for at least 120 minutes or until firm.
- Cut and Serve: Lift out of the pan and cut into approximately 36 small squares.
Notes
Store in an airtight container in the refrigerator for about two weeks, or freeze for up to three months.
