Description

Delightful Japanese pancakes filled with sweet red bean paste, perfect for a snack or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Sweet red bean paste (anko) for filling
  • Oil for frying

Instructions

  1. In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the eggs, milk, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed, being careful not to overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease it with oil.
  5. Pour a small amount of batter onto the skillet to form pancakes, ideally 3-4 inches in diameter.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  7. Remove from heat and allow to cool slightly.
  8. Spread a layer of sweet red bean paste between two pancakes to assemble.

Notes

Serve with green tea, fresh fruits, or ice cream for an enhanced experience. Store leftovers in an airtight container.
