Description

Ingredients

1 pre-baked 9-inch pie crust

1 cup packed brown sugar

3 tbsp cornstarch

1/4 tsp salt

2 cups whole milk

3 large egg yolks, beaten

2 tbsp butter

1 tsp vanilla extract

Whipped cream or meringue topping


Instructions

1. In a saucepan, whisk together brown sugar, cornstarch, and salt.

2. Gradually stir in milk until smooth.

3. Cook over medium heat, stirring constantly, until mixture thickens.

4. Slowly whisk some hot mixture into beaten egg yolks, then return to pan.

5. Cook 2–3 minutes more, stirring continuously.

6. Remove from heat and stir in butter and vanilla.

7. Pour filling into pre-baked crust and spread evenly.

8. Chill for at least 2 hours.

9. Top with whipped cream or meringue before serving.

Notes

Best served chilled with fresh whipped cream.

For a stronger flavor, add a pinch of nutmeg or cinnamon.

This pie can be stored in the refrigerator for up to 3 days.
