Description

A delightful pasta salad with crunchy pickles, savory bacon, and creamy dressing, perfect for any gathering.

Ingredients

Scale
  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • 8 slices Bacon
  • 8 ounces Short Pasta
  • 1 cup Pickles
  • 1 cup Mini Cucumbers
  • 1 cup Mild Cheese
  • 1/2 cup Red Onions
  • 1/4 cup Fresh Dill
  • To taste Salt and Pepper

Instructions

  1. Cook the pasta: Start by boiling a large pot of salted water. Add the short pasta and cook until al dente, according to the package instructions. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the dressing: In a mixing bowl, combine mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, and sugar. Mix well until you have a smooth dressing.
  3. Cook the bacon: In a skillet, cook the bacon over medium heat until crispy. Once done, transfer to a paper towel to drain excess fat, then crumble into pieces.
  4. Combine ingredients: In a large bowl, add the cooked pasta, crumbled bacon, pickles, mini cucumbers, mild cheese, red onions, and fresh dill. Pour the dressing over the top and mix until everything is evenly coated.
  5. Season: Taste the salad and add salt and pepper as needed for flavor.
  6. Chill and serve: Cover the salad and let it chill in the refrigerator for at least one hour before serving.

Notes

Feel free to customize this salad by adding vegetables like cherry tomatoes or substituting bacon with cooked chicken for a healthier option.
