Description

A simple and delightful recipe for chewy British flapjacks, perfect for snacking or gifting.


Ingredients

  • 175 g unsalted butter (about 12 tbsp)
  • 150 g golden syrup (about 1/2 cup)
  • 100 g light brown sugar (about 1/2 cup, packed)
  • 350 g rolled oats (about 4 cups)
  • Pinch of fine salt
  • Optional add-ins: 75 g raisins, chopped nuts, seeds, or chocolate chips

Instructions

  1. Line an 8-inch (20 cm) square baking pan with parchment, leaving a little overhang.
  2. Preheat your oven to 160°C (320°F).
  3. In a medium saucepan over low heat, melt the butter with golden syrup and brown sugar, stirring gently until glossy.
  4. Remove from heat, sprinkle in salt, and stir in oats until evenly coated. Fold in any optional add-ins.
  5. Scoop the mixture into the prepared pan and press down firmly to create an even layer.
  6. Bake for 18 to 25 minutes until light golden edges form and the center is soft.
  7. Let the pan cool on a rack for 15 to 20 minutes, then slice while still warm.
  8. Allow to cool completely in the pan before removing slices.

Notes

For the best texture, use rolled oats and press the mixture firmly into the pan to avoid crumbling.
