  • Few drops ube extract (omit for less intense flavor)
  • 2 cups cubed cheddar cheese (or any melty cheese)
  • 1 cup plain breadcrumbs (Panko for flakier texture)

Instructions

  1. Activate the yeast: In a small bowl, combine warm milk, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until frothy.
  2. Mix dry ingredients: In a large mixing bowl, sift together 3 cups of flour and salt.
  3. Combine wet ingredients: Add the yeast mixture to the dry ingredients along with egg, vegetable oil, and ube halaya. Mix until combined.
  4. Knead the dough: Add more flour gradually if too sticky. Knead on a floured surface for 10-15 minutes until smooth and elastic.
  5. First rise: Place dough in a greased bowl, cover, and let it rise in a warm area for 1-2 hours until doubled in size.
  6. Shape the pandesal: Punch down the dough, divide into small balls, flatten, place cheese in the center, and seal.
  7. Coat in breadcrumbs: Roll each sealed ball in breadcrumbs.
  8. Second rise: Place coated pandesal on a parchment-lined baking sheet, cover, and let rise for 30-45 minutes.
  9. Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
