- 1 cup warm milk (110°F, can use dairy-free milk)
- 1/4 cup white sugar (or half honey/agave syrup)

- 1 large egg (or flax egg for vegan alternative)
- 3 tablespoons vegetable oil (or melted coconut oil/unsalted butter)
- 1/2 cup ube halaya (homemade or store-bought)
- Few drops ube extract (omit for less intense flavor)
- 2 cups cubed cheddar cheese (or any melty cheese)
- 1 cup plain breadcrumbs (Panko for flakier texture)
Instructions
- Activate the yeast: In a small bowl, combine warm milk, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until frothy.
- Mix dry ingredients: In a large mixing bowl, sift together 3 cups of flour and salt.
- Combine wet ingredients: Add the yeast mixture to the dry ingredients along with egg, vegetable oil, and ube halaya. Mix until combined.
- Knead the dough: Add more flour gradually if too sticky. Knead on a floured surface for 10-15 minutes until smooth and elastic.
- First rise: Place dough in a greased bowl, cover, and let it rise in a warm area for 1-2 hours until doubled in size.
- Shape the pandesal: Punch down the dough, divide into small balls, flatten, place cheese in the center, and seal.
- Coat in breadcrumbs: Roll each sealed ball in breadcrumbs.
- Second rise: Place coated pandesal on a parchment-lined baking sheet, cover, and let rise for 30-45 minutes.
- Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
- Cool and serve: Let cool on a wire rack and enjoy warm.
