- 2¼ cups bread flour
- 1 large egg, room temperature
- ½ cup + 2 tablespoons warm milk
- 3 tablespoons unsalted butter, room temperature
- 5 tablespoons granulated sugar
- 1 teaspoon salt
- 1 envelope instant yeast (7g)
- 2¼ cups whole milk
- 2 teaspoons vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 3 egg yolks, room temperature
- 1 egg, room temperature
- ½ cup granulated sugar
- 2½ tablespoons cornstarch
- ¼ teaspoon salt
Instructions
- Activate the yeast by mixing ½ cup + 2 tablespoons of warm milk with 1 teaspoon of granulated sugar and instant yeast. Let sit for 5-10 minutes until foamy.
- In a large bowl, whisk together bread flour, 4 tablespoons of granulated sugar, and 1 teaspoon of salt. Create a well and pour in the foamy yeast mixture along with the large egg. Mix until a shaggy dough forms.
- Add softened butter to the dough and mix until well incorporated. Knead on a floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours until doubled in size.
- Once risen, punch down the dough and roll it out to ½ inch thickness. Cut out donuts and place on a parchment-lined baking sheet. Cover and let rise for 30-45 minutes until puffy.
- Prepare the custard by whisking together 2¼ cups of whole milk and 2 teaspoons of vanilla extract in a saucepan. In a separate bowl, whisk together 3 egg yolks, 1 room-temperature egg, ½ cup of granulated sugar, 2½ tablespoons of cornstarch, and ¼ teaspoon of salt until smooth.
- Heat the milk mixture until simmering. Gradually pour about ½ cup of hot milk into the egg mixture while whisking. Pour the egg mixture back into the saucepan with the remaining milk and cook over medium-low heat while whisking for 5-8 minutes until thickened. Stir in cocoa powder until smooth. Cool and refrigerate for at least 2 hours.
- Heat oil in a deep frying pan to 360°F (180°C). Fry 2-3 donuts at a time for 2-3 minutes on each side until golden brown. Drain on a wire rack.
- Fill donuts with chilled chocolate custard using a piping bag or by making a small slit.
- For a glaze, whisk 1 cup of powdered sugar with 2-3 tablespoons of milk or water until smooth. Drizzle or dip filled donuts in the glaze and let set before serving.
Notes
For the best texture, enjoy donuts fresh within 1-2 days. Consider freezing before glazing for longer storage.
