- 6 cups shredded rotisserie chicken or leftover cooked chicken breast
- 1/2 cup diced celery
- 1/3 cup diced red onion
- 1/4 cup pickle relish
- 1/4 cup plain Greek yogurt
- 1/3 cup mayo
- 2 tablespoons pickle juice
- 1 tablespoon Dijon mustard
- Salt and pepper – to taste
Instructions
- Prepare the Chicken: Shred or pull the chicken into smaller pieces.
- Mix the Ingredients: In a large bowl, add the shredded chicken, diced celery, red onion, and pickle relish.
- Add Creaminess: Pour in the Greek yogurt and mayonnaise, then add the pickle juice and Dijon mustard.
- Season: Sprinkle in some salt and pepper to taste.
- Combine: Gently toss all ingredients together until fully mixed.
- Serve: Enjoy immediately or chill in the refrigerator for a few hours.
