Description

Ingredients

  • 6 cups shredded rotisserie chicken or leftover cooked chicken breast
  • 1/2 cup diced celery
  • 1/3 cup diced red onion
  • 1/4 cup pickle relish
  • 1/4 cup plain Greek yogurt
  • 1/3 cup mayo
  • 2 tablespoons pickle juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper – to taste

Instructions

  1. Prepare the Chicken: Shred or pull the chicken into smaller pieces.
  2. Mix the Ingredients: In a large bowl, add the shredded chicken, diced celery, red onion, and pickle relish.
  3. Add Creaminess: Pour in the Greek yogurt and mayonnaise, then add the pickle juice and Dijon mustard.
  4. Season: Sprinkle in some salt and pepper to taste.
  5. Combine: Gently toss all ingredients together until fully mixed.
  6. Serve: Enjoy immediately or chill in the refrigerator for a few hours.
