Description

A rich and moist chocolate cake with a delightful raspberry swirl, perfect for any occasion.


Ingredients

  • 2 1/2 cups All-purpose flour
  • 1 cup Unsweetened cocoa powder
  • 1 1/2 tsp Baking soda
  • 2 1/2 tsp Baking powder
  • 1 tsp Salt
  • 1 3/4 cup White granulated sugar
  • 1 cup Buttermilk (room temperature)
  • 1 cup Vegetable oil
  • 4 Large eggs (room temperature)
  • 1 tsp Pure vanilla extract
  • 1 cup Hot water (steaming)
  • 1 cup Raspberries (fresh or frozen)
  • 1/4 cup Water
  • 2 cups Unsalted butter (room temperature)
  • 2 cups Powdered sugar (sifted)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together sugar, buttermilk, oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Slowly pour in the hot water and whisk until the batter is smooth and pourable.
  6. In a small saucepan, combine raspberries and water; cook over medium heat, mashing the berries and stirring occasionally for 5-7 minutes until slightly thickened. Let cool.
  7. Pour half the batter into one prepared pan, spoon half the raspberry mixture over it, and gently swirl. Repeat with remaining batter and raspberry mixture in the second pan.
  8. Bake for 30-35 minutes, or until a skewer inserted into the center comes out clean.
  9. Cool cakes in pans for 15-20 minutes, then invert onto a wire rack to cool completely.
  10. Beat room-temperature butter until light and fluffy, then gradually add sifted powdered sugar, beating until light and airy.
  11. Place one cooled cake layer on a serving plate, spread a layer of frosting on top, then place the second layer on top.
  12. Frost the entire cake with the remaining frosting and garnish with fresh raspberries or shaved chocolate if desired.
