- 1 cup rolled oats
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (optional, such as walnuts or pecans)
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, brown sugar, granulated sugar, all-purpose flour, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Stir until well mixed.
- In a separate bowl, cream the softened butter until light and fluffy. Add egg whites one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- If desired, fold in the chopped nuts and chocolate chips until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12 to 15 minutes, or until edges are lightly golden and centers appear set but chewy.
- Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
