Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional, such as walnuts or pecans)
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, brown sugar, granulated sugar, all-purpose flour, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Stir until well mixed.
  3. In a separate bowl, cream the softened butter until light and fluffy. Add egg whites one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. If desired, fold in the chopped nuts and chocolate chips until evenly distributed.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 12 to 15 minutes, or until edges are lightly golden and centers appear set but chewy.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
