Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the flour, baking soda, and salt in a bowl. Set aside.
- Cream the butter, brown sugar, and granulated sugar in a larger bowl until light and fluffy.
- Add the eggs and vanilla extract to the mixture, beating well.
- Combine the wet ingredients with the dry ingredients until just incorporated.
- Fold in the chocolate chips.
- Prepare brownie pieces by cutting them into small squares.
- Assemble the cookies by taking a tablespoon of cookie dough, flattening it, placing a brownie piece in the center, and wrapping the dough around it.
- Bake on a parchment-lined sheet for 12-15 minutes or until edges are golden brown.
- Cool for a few minutes before transferring to a wire rack.
Notes
For a vegan option, use flax eggs and coconut oil instead of butter. Store in an airtight container.
