- 1 cup Almond Flour
- 1 tbsp Maple Syrup
- 2–4 tbsp Water
- 1 cup Medjool Dates
- 1 cup Coconut Milk
- 1 tbsp Vanilla Extract (Optional)
- 1/4 tsp Sea Salt
- 2 tbsp Cornstarch
Instructions
- Combine almond flour, maple syrup, and sea salt in a bowl.
- Add 2-4 tbsp of water gradually, mixing until a dough forms.
- Press the mixture into a tart pan evenly.
- Preheat your oven to 350°F (175°C).
- Poke holes in the crust with a fork.
- Bake the crust for 10-12 minutes until lightly golden.
- Allow the crust to cool completely.
- In a blender, combine Medjool dates, coconut milk, vanilla extract, cornstarch, and sea salt.
- Blend until smooth and creamy, adding coconut milk if needed.
- Pour the filling into the cooled crust.
- Bake in the oven for 25-30 minutes until set.
- Cool for at least an hour and serve chilled or at room temperature.
Notes
For added flavor, garnish with nuts or a sprinkle of sea salt before serving. This tart can also be chilled in the refrigerator for a more firm texture.
