Description

A festive tart featuring a crunchy chocolate crust and light peppermint mousse, perfect for celebrations.


Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 8 ounces dark chocolate (70% cacao), chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon peppermint extract
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • A pinch of salt
  • 1 cup heavy cream (for topping)
  • 2 tablespoons powdered sugar
  • 1 teaspoon peppermint extract (for topping)
  • Crushed peppermint candies for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the chocolate cookie crumbs, melted butter, granulated sugar, and salt until combined.
  3. Press the crust mixture firmly into the bottom and up the sides of a 9-inch tart pan.
  4. Bake the crust in the preheated oven for 10 minutes. Remove it from the oven and let it cool completely on a wire rack.
  5. In a microwave-safe bowl, combine the chopped dark chocolate and butter. Microwave until melted and smooth.
  6. In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy. Stir in the melted chocolate mixture and peppermint extract.
  7. Beat the egg whites with a pinch of salt until stiff peaks form, then fold into the chocolate mixture.
  8. Whip 1 cup of heavy cream until soft peaks form, then fold into the chocolate mixture.
  9. Pour the peppermint mousse into the cooled crust, smoothing the top. Refrigerate for at least 4 hours, or until set.
  10. Prepare the topping by whipping heavy cream, powdered sugar, and peppermint extract until soft peaks form. Spread over the chilled mousse tart.
  11. Garnish with crushed peppermint candies if desired.

Notes

To store, keep in an airtight container in the refrigerator for up to 3 days.
