A festive tart featuring a crunchy chocolate crust and light peppermint mousse, perfect for celebrations.

- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 8 ounces dark chocolate (70% cacao), chopped
- 2 tablespoons unsalted butter
- 1 teaspoon peppermint extract
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 cup heavy cream
- A pinch of salt
- 1 cup heavy cream (for topping)
- 2 tablespoons powdered sugar
- 1 teaspoon peppermint extract (for topping)
- Crushed peppermint candies for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix together the chocolate cookie crumbs, melted butter, granulated sugar, and salt until combined.
- Press the crust mixture firmly into the bottom and up the sides of a 9-inch tart pan.
- Bake the crust in the preheated oven for 10 minutes. Remove it from the oven and let it cool completely on a wire rack.
- In a microwave-safe bowl, combine the chopped dark chocolate and butter. Microwave until melted and smooth.
- In a separate bowl, whisk the egg yolks with granulated sugar until pale and creamy. Stir in the melted chocolate mixture and peppermint extract.
- Beat the egg whites with a pinch of salt until stiff peaks form, then fold into the chocolate mixture.
- Whip 1 cup of heavy cream until soft peaks form, then fold into the chocolate mixture.
- Pour the peppermint mousse into the cooled crust, smoothing the top. Refrigerate for at least 4 hours, or until set.
- Prepare the topping by whipping heavy cream, powdered sugar, and peppermint extract until soft peaks form. Spread over the chilled mousse tart.
- Garnish with crushed peppermint candies if desired.
Notes
To store, keep in an airtight container in the refrigerator for up to 3 days.
