- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 cup dark chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir until well mixed.
- Add the wet ingredients: softened butter, eggs, vanilla extract, and buttermilk. Mix until smooth.
- Line a cupcake pan with paper liners. Fill each liner about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- While the cupcakes cool, heat heavy cream in a saucepan until simmering. Pour over dark chocolate chips in a mixing bowl. Let sit for 2 minutes, then stir until smooth.
- Once cupcakes are cool, top with ganache using a spoon or piping bag.
Notes
Store in an airtight container. They can last for 2-3 days at room temperature, up to a week in the refrigerator, and can be frozen for up to 3 months without ganache.
