Instructions
- Prepare the corn: Drain the can of whole kernel corn and set it aside in a bowl.
- Chop the bell pepper: If using a red bell pepper, wash it thoroughly, cut it into small diced pieces, and add it to the bowl with corn.
- Mix in the cheese: Add the shredded Mexican blend cheese to the bowl for a creamy texture.
- Add the mayonnaise: Pour in the mayonnaise and mix everything together well until fully coated.
- Season with pepper: Add black pepper to taste and stir to ensure even distribution.
- Toss in the Fritos: Gently fold in the Chili Cheese Fritos or plain Fritos, keeping them intact for crunch.
- Garnish with cilantro: If using, add cilantro on top for flavor and color.
- Chill and serve: Let the salad chill in the refrigerator for about 30 minutes before serving.
