Description

Delightful broccoli and cheese bites that are crunchy on the outside and cheesy on the inside, perfect as a snack or appetizer.


Ingredients

  • 2 cups broccoli florets, chopped
  • 1 cup cheddar cheese, shredded
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly spraying it with cooking spray.
  2. Blanch the chopped broccoli in boiling water for 2 minutes, then drain and pat dry.
  3. In a large mixing bowl, combine the blanched broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until a sticky mixture forms.
  4. Form the mixture into small balls or patties, about the size of golf balls, and place them on the baking sheet. Brush the tops with olive oil.
  5. Bake for 20-25 minutes or until golden brown and crispy.
  6. Let them cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
