Delightful broccoli and cheese bites that are crunchy on the outside and cheesy on the inside, perfect as a snack or appetizer.

- 2 cups broccoli florets, chopped
- 1 cup cheddar cheese, shredded
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- Cooking spray
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly spraying it with cooking spray.
- Blanch the chopped broccoli in boiling water for 2 minutes, then drain and pat dry.
- In a large mixing bowl, combine the blanched broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until a sticky mixture forms.
- Form the mixture into small balls or patties, about the size of golf balls, and place them on the baking sheet. Brush the tops with olive oil.
- Bake for 20-25 minutes or until golden brown and crispy.
- Let them cool slightly before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
