Description

A delicious way to sneak in some veggies, these crispy and cheesy bites are perfect as a snack or party appetizer.


Ingredients

  • 2 cups fresh broccoli, finely chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or olive oil.
  2. Wash and finely chop the fresh broccoli. A food processor can be used for a finer texture.
  3. In a large bowl, combine the chopped broccoli, shredded cheese, breadcrumbs, grated Parmesan, eggs, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.
  4. Using your hands, scoop the mixture and form small bites about the size of a golf ball. Place them on the prepared baking sheet, leaving space in between for even baking.
  5. Bake for 20-25 minutes or until the bites are golden brown and crispy.
  6. Remove from the oven and allow to cool for a few minutes before serving.

Notes

These bites can also be made ahead of time and stored in the refrigerator or frozen unbaked for later use.
