A delicious way to sneak in some veggies, these crispy and cheesy bites are perfect as a snack or party appetizer.

- 2 cups fresh broccoli, finely chopped
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1/2 cup breadcrumbs (panko for extra crunch)
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 2 tablespoons mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or olive oil for greasing
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or olive oil.
- Wash and finely chop the fresh broccoli. A food processor can be used for a finer texture.
- In a large bowl, combine the chopped broccoli, shredded cheese, breadcrumbs, grated Parmesan, eggs, mayonnaise, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.
- Using your hands, scoop the mixture and form small bites about the size of a golf ball. Place them on the prepared baking sheet, leaving space in between for even baking.
- Bake for 20-25 minutes or until the bites are golden brown and crispy.
- Remove from the oven and allow to cool for a few minutes before serving.
Notes
These bites can also be made ahead of time and stored in the refrigerator or frozen unbaked for later use.
