Description

A creamy and nutty Thai dish featuring tender chicken thighs slow-cooked in a delicious peanut sauce.


Ingredients

  • 2 pounds chicken thighs
  • 1 cup peanut butter
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, mix together the peanut butter, coconut milk, soy sauce, honey, lime juice, garlic, and ginger until smooth.
  3. Pour the peanut sauce over the chicken in the slow cooker.
  4. Season with salt and pepper.
  5. Cover and cook on low for 360-420 minutes or on high for 180-240 minutes, until the chicken is cooked through and tender.
  6. Once done, shred the chicken in the sauce and stir to combine.
  7. Serve over rice or noodles, garnished with green onions and cilantro.

Notes

For extra flavor, use skin-on chicken thighs. Adjust sweetness by adding more honey if desired.
