A creamy and nutty Thai dish featuring tender chicken thighs slow-cooked in a delicious peanut sauce.

- 2 pounds chicken thighs
- 1 cup peanut butter
- 1 cup coconut milk
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Salt and pepper to taste
- Chopped green onions and cilantro for garnish
Instructions
- Place the chicken thighs in the slow cooker.
- In a bowl, mix together the peanut butter, coconut milk, soy sauce, honey, lime juice, garlic, and ginger until smooth.
- Pour the peanut sauce over the chicken in the slow cooker.
- Season with salt and pepper.
- Cover and cook on low for 360-420 minutes or on high for 180-240 minutes, until the chicken is cooked through and tender.
- Once done, shred the chicken in the sauce and stir to combine.
- Serve over rice or noodles, garnished with green onions and cilantro.
Notes
For extra flavor, use skin-on chicken thighs. Adjust sweetness by adding more honey if desired.
