- 1 cup coconut milk
- 1/4 cup soy sauce
- 2 tablespoons honey

Instructions
- Combine peanut butter, coconut milk, soy sauce, honey, garlic, ginger, and lime juice in a slow cooker. Mix until smooth.
- Add chicken thighs, coating them with the sauce. Season with salt and pepper.
- Cover and cook on low for 360 minutes or high for 240 minutes, until chicken is tender and cooked through.
- Shred the chicken in the sauce and stir to combine.
- Serve over cooked rice or noodles and enjoy!
