- 1 pound Italian or smoked sausage, sliced
- 2 pounds Yukon Gold or red potatoes, chopped
- 1 medium sweet onion, thinly sliced
- 1 cup chopped bell peppers (red or green)
- 4 garlic cloves, minced
- 3 cups low-sodium chicken broth
- 2 teaspoons Italian seasoning
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and bell peppers, cooking and stirring until softened.
- Add sliced sausage to the skillet; cook until lightly browned.
- Transfer sautéed vegetables and sausage to the crockpot.
- Add chopped potatoes and minced garlic to the crockpot.
- Sprinkle Italian seasoning, salt, and black pepper; stir to combine.
- Pour chicken broth over the ingredients in the crockpot.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until potatoes are tender.
Notes
Browning the sausage first adds extra flavor. Ensure potato pieces are of similar size for even cooking.
