Description

A hearty and comforting dish made with sausage, potatoes, and vegetables, perfect for busy days and easy meal prep.


Ingredients

  • 1 pound Italian or smoked sausage, sliced
  • 2 pounds Yukon Gold or red potatoes, chopped
  • 1 medium sweet onion, thinly sliced
  • 1 cup chopped bell peppers (red or green)
  • 4 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and bell peppers, cooking and stirring until softened.
  3. Add sliced sausage to the skillet; cook until lightly browned.
  4. Transfer sautéed vegetables and sausage to the crockpot.
  5. Add chopped potatoes and minced garlic to the crockpot.
  6. Sprinkle Italian seasoning, salt, and black pepper; stir to combine.
  7. Pour chicken broth over the ingredients in the crockpot.
  8. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until potatoes are tender.

Notes

Browning the sausage first adds extra flavor. Ensure potato pieces are of similar size for even cooking.
