Description

Ingredients

  • 1 pound Italian or smoked sausage, sliced
  • 2 pounds Yukon Gold or red potatoes, chopped
  • 1 medium sweet onion, thinly sliced
  • 1 cup chopped bell peppers (red or green)
  • 4 garlic cloves, minced
  • 3 cups low-sodium chicken broth
  • 2 teaspoons Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and bell peppers and cook, stirring occasionally, until the vegetables are softened.
  3. Add the sliced sausage to the skillet. Cook, turning occasionally, until the sausage is lightly browned.
  4. Transfer the sautéed vegetables and browned sausage from the skillet to the crockpot.
  5. Add chopped potatoes and minced garlic.
  6. Sprinkle Italian seasoning, salt, and black pepper over the mixture. Gently stir to combine all ingredients evenly.
  7. Pour chicken broth over the contents in the crockpot.
  8. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender.
