- 1 pound Italian or smoked sausage, sliced
- 2 pounds Yukon Gold or red potatoes, chopped
- 1 medium sweet onion, thinly sliced
- 1 cup chopped bell peppers (red or green)
- 4 garlic cloves, minced
- 3 cups low-sodium chicken broth
- 2 teaspoons Italian seasoning
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and bell peppers and cook, stirring occasionally, until the vegetables are softened.
- Add the sliced sausage to the skillet. Cook, turning occasionally, until the sausage is lightly browned.
- Transfer the sautéed vegetables and browned sausage from the skillet to the crockpot.
- Add chopped potatoes and minced garlic.
- Sprinkle Italian seasoning, salt, and black pepper over the mixture. Gently stir to combine all ingredients evenly.
- Pour chicken broth over the contents in the crockpot.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender.
