- 2 pounds beef stew meat, cut into 1-inch cubes
- 1.5 pounds baby potatoes, halved

- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 tablespoon lemon juice

Instructions
- Prep the ingredients: Start by cutting the beef into 1-inch cubes. Halve the baby potatoes for even cooking. Mince the garlic and chop the parsley and thyme.
- Make the garlic butter sauce: In a small mixing bowl, combine the melted butter, minced garlic, beef broth, lemon juice, parsley, thyme, salt, black pepper, and optional red pepper flakes. Whisk everything together until it’s well blended.
- Combine in the crockpot: Add the cubed beef and halved potatoes to the crockpot. Gently toss them together to ensure they are evenly mixed.
- Add the sauce: Pour the garlic butter sauce over the beef and potatoes. Stir gently to coat everything with the sauce.
- Cook: Cover the crockpot with its lid and cook on LOW for 5-6 hours or on HIGH for 3-4 hours until the beef is fork-tender.
- Taste and serve: Once cooked, taste the mixture and adjust the seasoning if needed. Sprinkle with extra parsley before serving and drizzle some of the buttery sauce over the top.
