Crockpot Creamy Tortellini is a hearty and comforting meal, perfect for busy days, filled with delicious flavors, and easy to prepare in one pot.

- 1 lb Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 cup chicken broth
- 1 cup heavy cream
- 1 package (9 oz) cheese tortellini
- 4 cups fresh spinach
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a skillet, cook the Italian sausage over medium heat until browned. Drain any excess fat and transfer to the crockpot.
- Add the chopped onion, minced garlic, diced tomatoes, tomato sauce, chicken broth, dried basil, dried oregano, and salt and pepper to the crockpot. Stir well.
- Cover and cook on low for 5-6 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the cheese tortellini and fresh spinach, then stir in the heavy cream.
- Continue cooking until the tortellini is tender and the spinach wilted (about 30 minutes).
- Serve hot, topped with grated Parmesan cheese.
Notes
Adjust seasoning to taste and be careful not to overcook the tortellini.
