Description

Crockpot Creamy Tortellini is a hearty and comforting meal, perfect for busy days, filled with delicious flavors, and easy to prepare in one pot.


Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 package (9 oz) cheese tortellini
  • 4 cups fresh spinach
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a skillet, cook the Italian sausage over medium heat until browned. Drain any excess fat and transfer to the crockpot.
  2. Add the chopped onion, minced garlic, diced tomatoes, tomato sauce, chicken broth, dried basil, dried oregano, and salt and pepper to the crockpot. Stir well.
  3. Cover and cook on low for 5-6 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, add the cheese tortellini and fresh spinach, then stir in the heavy cream.
  5. Continue cooking until the tortellini is tender and the spinach wilted (about 30 minutes).
  6. Serve hot, topped with grated Parmesan cheese.

Notes

Adjust seasoning to taste and be careful not to overcook the tortellini.
