A delightful blend of flavors and textures, this Crockpot Creamy Coconut Chicken Tikka Masala is easy to prepare and cooks slowly for a rich and creamy sauce.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 can (14 oz) coconut cream
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp garam masala
  • 1 tbsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • Fresh cilantro for garnish

Instructions

  1. Place the chicken thighs in a crockpot.
  2. Mix together the coconut cream, chopped onion, minced garlic, grated ginger, garam masala, cumin, turmeric, paprika, cayenne pepper, salt, pepper, chicken broth, and tomato paste in a bowl.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cover and cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is tender.
  5. Shred the chicken in the sauce and stir well.
  6. Serve hot over rice or with naan, garnished with fresh cilantro.

Notes

For a vegetarian version, replace chicken with chickpeas or your favorite vegetables. The dish pairs well with rice or naan.
