Description

Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1 cup Cranberry sauce
  • 1/2 cup Honey
  • 1/4 cup Soy sauce (low sodium preferred)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 cup Chopped fresh parsley (for garnish)

Instructions

  1. In a medium bowl, combine the cranberry sauce, honey, soy sauce, minced garlic, Dijon mustard, dried thyme, salt, and black pepper. Mix well.
  2. Place the chicken breasts in the bottom of the crockpot and spread them evenly.
  3. Pour the cranberry sauce mixture over the chicken, ensuring they are coated.
  4. Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours until the chicken reaches an internal temperature of 165°F (75°C).
  5. Carefully remove the chicken and place it on a serving platter. Shred if desired.
  6. Allow the remaining sauce to cool slightly, and thicken if desired by cooking on high for 15 minutes.
  7. Drizzle the sauce over the chicken and garnish with fresh parsley before serving.
