- 4 cups chicken broth
- 1 can (15 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese

- Salt and pepper to taste
- Cooked pasta or rice (optional)
- Fresh basil for garnish (optional)
Instructions
- Place the chicken breasts in the crockpot and pour in the chicken broth and diced tomatoes.
- Add Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4-5 hours, until the chicken is cooked through.
- Shred the chicken in the crockpot using two forks.
- Stir in the heavy cream and Parmesan cheese, then add the mozzarella.
- Allow the cheese to melt, about 10-15 minutes.
- Serve hot, over cooked pasta or rice if desired, and garnish with fresh basil.
Notes
