Ingredients

- 1 pound boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cups egg noodles
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Place the chicken breasts in the slow cooker.
- Add the chicken broth, onion, carrots, celery, garlic, thyme, salt, and pepper.
- Cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is cooked through.
- Remove the chicken breasts, shred them, and return to the slow cooker.
- Add the egg noodles and cook for an additional 15-20 minutes until noodles are tender.
- Serve hot, garnished with chopped parsley.
