Description

A comforting and satisfying meal perfect for chilly days, made easy in a slow cooker.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 medium onion, diced
  • 3 medium carrots, sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 1 cup frozen peas (optional)
  • 1 cup heavy cream or half-and-half
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp melted butter

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the diced onion, sliced carrots, sliced celery, and minced garlic.
  3. Pour in the chicken broth and cream of chicken soup; stir to combine.
  4. Season with dried thyme, parsley, salt, and pepper.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Remove the chicken and shred it, then return it to the crockpot.
  7. Add frozen peas and heavy cream, stirring until combined.
  8. In a separate bowl, mix flour, baking powder, and salt. Then add milk and melted butter; combine gently.
  9. Drop spoonfuls of dumpling batter over the mixture in the crockpot.
  10. Cover and cook on high for an additional 30-40 minutes until dumplings are puffed up.
  11. Serve immediately and enjoy!

Notes

Use fresh ingredients for the best flavor, and don’t skip the cream for a rich texture.
