A delicious and simple dish prepared in a slow cooker, featuring tender chicken in a creamy mozzarella and Parmesan sauce.

- 2 lbs boneless skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 3 cloves garlic (minced)
- 1 can condensed cream of chicken soup (10.5-oz)
- 1/2 cup low-sodium chicken broth
- 1 cup shredded mozzarella cheese (divided: 1/2 cup for sauce, 1/2 cup for topping)
- 1/2 cup shredded Parmesan cheese
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon olive oil or melted butter
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels.
- Season both sides of the chicken with salt, black pepper, and Italian seasoning.
- Place the seasoned chicken in a single layer at the bottom of the slow cooker. Drizzle with olive oil or melted butter.
- In a bowl, whisk together the cream of chicken soup, chicken broth, minced garlic, and 1/2 cup of mozzarella cheese until smooth.
- Pour the sauce evenly over the chicken.
- Cover and cook on low for 4 to 5 hours or on high for 2 to 2.5 hours, until the chicken reaches 165°F.
- 10 to 15 minutes before serving, sprinkle the remaining mozzarella and all of the Parmesan cheese over the chicken. Cover and let melt.
- Garnish with parsley and red pepper flakes if desired, and serve warm.
Notes
Serve with pasta, rice, or mashed potatoes for a complete meal. Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
