Description

A delicious and simple dish prepared in a slow cooker, featuring tender chicken in a creamy mozzarella and Parmesan sauce.


Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic (minced)
  • 1 can condensed cream of chicken soup (10.5-oz)
  • 1/2 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese (divided: 1/2 cup for sauce, 1/2 cup for topping)
  • 1/2 cup shredded Parmesan cheese
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon olive oil or melted butter
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides of the chicken with salt, black pepper, and Italian seasoning.
  3. Place the seasoned chicken in a single layer at the bottom of the slow cooker. Drizzle with olive oil or melted butter.
  4. In a bowl, whisk together the cream of chicken soup, chicken broth, minced garlic, and 1/2 cup of mozzarella cheese until smooth.
  5. Pour the sauce evenly over the chicken.
  6. Cover and cook on low for 4 to 5 hours or on high for 2 to 2.5 hours, until the chicken reaches 165°F.
  7. 10 to 15 minutes before serving, sprinkle the remaining mozzarella and all of the Parmesan cheese over the chicken. Cover and let melt.
  8. Garnish with parsley and red pepper flakes if desired, and serve warm.

Notes

Serve with pasta, rice, or mashed potatoes for a complete meal. Store leftovers in airtight containers in the refrigerator for up to 3-4 days.
