- 1 cup chopped onion
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 package ranch seasoning mix
- Salt and pepper to taste
- 1 cup cooked and crumbled bacon (optional)
Instructions
- Place the diced potatoes, chopped onion, and beef broth in the slow cooker.
- Cook on low for 420 minutes or high for 240 minutes until the potatoes are tender.
- Stir in the ranch seasoning mix, cheddar cheese, and sour cream.
- Mix well and let it cook for an additional 30 minutes.
- Season with salt and pepper to taste.
- If desired, top with crumbled bacon before serving.

Don’t overcrowd the pot and adjust the consistency by adding more broth if needed.
