Description

A comforting and flavorful Crock Pot Jambalaya with chicken, sausage, and a mix of spices.


Ingredients

  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 ounces)
  • 1 cup chicken broth
  • 1 teaspoon cajun seasoning
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Combine the chicken, sausage, bell pepper, onion, celery, and garlic in a crock pot.
  2. Add the diced tomatoes, chicken broth, cajun seasoning, oregano, and bay leaf. Stir to combine.
  3. Cover and cook on low for 360 minutes or high for 240 minutes.
  4. Stir in the cooked rice, and season with salt and pepper to taste before serving.
  5. Garnish with green onions and serve warm.

Notes

For a milder flavor, reduce the amount of cajun seasoning. Fresh ingredients enhance the flavor significantly.
