- 1 pound boneless, skinless chicken breasts
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crock pot.
- Add the diced tomatoes, chicken broth, minced garlic, dried basil, dried oregano, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
- Remove the chicken and shred it using two forks, then return it to the pot.
- Stir in the heavy cream and grated Parmesan cheese.
- Cook for an additional 30 minutes on low until the soup is warmed through and creamy.
- Serve hot, garnished with additional Parmesan cheese, if desired.
Notes
Shredding the chicken after cooking improves texture and flavor distribution. Adjust seasoning to taste and use fresh ingredients for the best results.
