Description

A creamy and hearty potato soup made in a crock pot, perfect for chilly evenings.


Ingredients

  • 4 large potatoes, diced
  • 1 medium onion, chopped
  • 2 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked bacon, crumbled
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Place the diced potatoes, chopped onion, and chicken broth in the crock pot.
  2. Cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours) until the potatoes are tender.
  3. Add the cream cheese, shredded cheese, bacon, garlic powder, salt, and pepper to the pot.
  4. Stir well to combine all ingredients.
  5. Cook for another 30 minutes on low for the flavors to meld.
  6. Serve hot, garnished with green onions.

Notes
