Ingredients

- 4 large potatoes, diced
- 1 medium onion, chopped
- 2 cups chicken broth
- 1 cup cream cheese, softened
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked bacon, crumbled
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Place the diced potatoes, chopped onion, and chicken broth in the crock pot.
- Cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours) until the potatoes are tender.
- Add the cream cheese, shredded cheese, bacon, garlic powder, salt, and pepper to the pot.
- Stir well to combine all ingredients.
- Cook for another 30 minutes on low for the flavors to meld.
- Serve hot, garnished with green onions.
Notes
Store leftovers in airtight containers in the refrigerator for up to 3-4 days. Can be frozen for 2-3 months.
