- 1 box (6 oz) savory herb stuffing mix
- 1 can (10.5 oz) cream of chicken soup, undiluted
- 1/2 cup sour cream
- 1 cup low-sodium chicken broth
- 2 cups frozen mixed vegetables, thawed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt to taste
- Pepper to taste
Instructions
- Pat chicken breasts dry and season with salt, pepper, garlic powder, and thyme.
- In a bowl, combine stuffing mix and mixed vegetables; add 1/2 cup broth gradually.
- Whisk together cream of chicken soup, sour cream, and remaining broth until smooth.
- Grease slow cooker, pour half creamy mixture in, and place chicken on top.
- Spoon remaining creamy mixture over chicken, then add stuffing on top.
- Cook on LOW for 3-4 hours or HIGH for 2-3 hours until chicken is tender.
- Allow to rest for 10-15 minutes before serving.
