Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 box (6 oz) savory herb stuffing mix
  • 1 can (10.5 oz) cream of chicken soup, undiluted
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth
  • 2 cups frozen mixed vegetables, thawed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Pat chicken breasts dry and season with salt, pepper, garlic powder, and thyme.
  2. In a bowl, combine stuffing mix and mixed vegetables; add 1/2 cup broth gradually.
  3. Whisk together cream of chicken soup, sour cream, and remaining broth until smooth.
  4. Grease slow cooker, pour half creamy mixture in, and place chicken on top.
  5. Spoon remaining creamy mixture over chicken, then add stuffing on top.
  6. Cook on LOW for 3-4 hours or HIGH for 2-3 hours until chicken is tender.
  7. Allow to rest for 10-15 minutes before serving.
