Ingredients

  • 2 medium zucchinis, grated
  • 1 cup feta cheese, crumbled
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Start by grating the zucchinis and then place them in a clean kitchen towel. Squeeze out the excess moisture.
  2. Combine the grated zucchini, feta cheese, breadcrumbs, Parmesan cheese, garlic, eggs, parsley, dill, salt, and pepper in a large bowl until well mixed.
  3. Shape the mixture into small balls or patties, making sure they are compact.
  4. Heat olive oil in a frying pan over medium heat.
  5. Fry the zucchini balls in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the zucchini balls and drain them on paper towels.
