- 2 medium zucchinis, grated
- 1 cup feta cheese, crumbled
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Start by grating the zucchinis and then place them in a clean kitchen towel. Squeeze out the excess moisture.
- Combine the grated zucchini, feta cheese, breadcrumbs, Parmesan cheese, garlic, eggs, parsley, dill, salt, and pepper in a large bowl until well mixed.
- Shape the mixture into small balls or patties, making sure they are compact.
- Heat olive oil in a frying pan over medium heat.
- Fry the zucchini balls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove the zucchini balls and drain them on paper towels.
- Serve warm and enjoy!
