- 8 small corn tortillas
- 1 cup cooked and seasoned black beans
- 1 cup corn kernels
- 1/2 cup diced bell pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt to taste
- Oil for frying
Instructions
- In a mixing bowl, combine black beans, corn, bell pepper, cumin, chili powder, and salt.
- Heat oil in a frying pan over medium heat.
- Take a tortilla, fill it with the bean mixture, and roll it up tightly.
- Secure with a toothpick if necessary.
- Fry the taquitos in the oil until golden and crispy, about 3-4 minutes per side.
- Drain on paper towels and serve with your favorite salsa or dipping sauce.
Notes
Don’t overfill the tortillas and make sure to heat them slightly before rolling for best results.
