Description

Delicious and satisfying crispy vegan taquitos loaded with a flavorful filling of black beans, corn, and bell peppers.


Ingredients

  • 8 small corn tortillas
  • 1 cup cooked and seasoned black beans
  • 1 cup corn kernels
  • 1/2 cup diced bell pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt to taste
  • Oil for frying

Instructions

  1. In a mixing bowl, combine black beans, corn, bell pepper, cumin, chili powder, and salt.
  2. Heat oil in a frying pan over medium heat.
  3. Take a tortilla, fill it with the bean mixture, and roll it up tightly.
  4. Secure with a toothpick if necessary.
  5. Fry the taquitos in the oil until golden and crispy, about 3-4 minutes per side.
  6. Drain on paper towels and serve with your favorite salsa or dipping sauce.
