Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the chicken thighs with olive oil, salt, pepper, and the poultry herb mix.
- Place the seasoned chicken thighs in a large baking dish.
- Cut the Yukon Gold potatoes into wedges and add them to the baking dish, tossing with remaining olive oil, salt, and pepper.
- Arrange the potatoes around the chicken in a single layer.
- Roast in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the skin is crispy, and the potatoes are tender.
