Description

Delightful and crispy banana fritters that are perfect for breakfast or a snack.

Ingredients

Scale
  • 23 overripe Bananas (peeled and mashed until smooth)
  • 1 cup all-purpose Flour (or gluten-free flour)
  • 1/2 cup Milk (or almond milk for dairy-free)
  • 2 tablespoons Sugar (reduce if using very sweet bananas)
  • 1 teaspoon Baking Powder (ensure freshness)
  • 1 teaspoon Vanilla Extract (optional but recommended)
  • 1 pinch Salt (to balance sweetness)
  • 1 teaspoon Warm Spices (Cinnamon and Nutmeg, adjust to taste)
  • 1/4 cup Shredded Coconut (optional)
  • 1/4 cup Diced Pineapple (optional)
  • 1 tablespoon Rum or Coconut Milk (optional)
  • Powdered Sugar or Whipped Cream (for serving)

Instructions

  1. Prepare the Bananas: Start by peeling your overripe bananas and placing them in a bowl. Use a fork or potato masher to mash them thoroughly until smooth.
  2. Mix the Dry Ingredients: In a separate bowl, combine the flour, sugar, baking powder, salt, and warm spices (cinnamon and nutmeg). Mix these ingredients well.
  3. Combine Wet and Dry Ingredients: Pour the mashed bananas into the bowl with dry ingredients. Add the milk and vanilla extract. Stir everything together until combined.
  4. Add Optional Ingredients: Fold in the shredded coconut and diced pineapple. Optionally add a splash of rum or coconut milk.
  5. Heat the Skillet: Heat a non-stick skillet over medium heat, adding oil or butter if desired.
  6. Cook the Fritters: Drop batter onto the hot skillet, cooking for about 3-4 minutes until golden brown.
  7. Flip and Continue Cooking: Carefully flip each fritter and cook for another 2-3 minutes until crispy.
  8. Serve and Enjoy: Dust the fritters with powdered sugar or serve with whipped cream. Enjoy them warm!

Notes

These fritters are versatile and can be served with fresh fruits, yogurt, nut butter, or syrup.
