- 3 cups chickpeas (2–15 ounce cans)
- 1 tablespoon olive oil (or try coconut oil)
- 1 teaspoon salt
- Optional: smoked paprika, garlic powder, cumin, coriander, sumac, chili powder
Instructions
- Soak and Clean the Chickpeas: Place your cooked chickpeas in a bowl of water and gently rub them to loosen the skins. Repeat until most skins are removed.
- Dry the Chickpeas: Drain and spread them on a towel, patting dry and removing any remaining peels.
- Preheat the Oven: Place on a baking sheet in an oven preheated to 350°F to dry them out.
- Add Oil and Seasoning: Drizzle with olive oil and toss gently to coat.
- Roast the Chickpeas: Roast for about 45 minutes, stirring every 15 minutes. If needed, leave them in the oven for an additional 5 to 10 minutes after turning it off.
- Toss with Seasonings: While warm, toss with your selected spices for added flavor.
- Store Your Chickpeas: Store uncovered for a day, or in an airtight container for longer storage.
Notes
Ensure chickpeas are fully dried before roasting and avoid overcrowding the pan for best results.
