Ingredients

  • 1 package pierogies
  • 1 pound kielbasa, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a large sheet pan, toss the mixed vegetables and sliced kielbasa with olive oil, salt, and pepper.
  3. Spread the pierogies on the sheet pan, tucking them among the vegetables and kielbasa.
  4. Place the sheet pan in the oven and roast for 20-25 minutes, or until everything is crispy and heated through.
  5. In a small skillet, melt butter over medium heat and add minced garlic. Cook until fragrant.
  6. Drizzle the garlic butter over the sheet pan meal before serving.
  7. Serve hot with a dollop of sour cream.
