- 4 Chicken breasts
- 8 oz Cream cheese
- 1/2 cup Dried cranberries
- 1/2 cup Pecans
- 2 tbsp Fresh herbs (like thyme or rosemary)

- 2 tbsp Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Combine cream cheese, chopped dried cranberries, and pecans in a bowl. Add fresh herbs, salt, and pepper to taste.
- Flatten chicken breasts with a meat mallet and spread the cream cheese mixture evenly over each piece.
- Roll up each chicken breast tightly and secure with toothpicks.
- Heat olive oil in a skillet over medium heat and sear the chicken rollups until golden brown on all sides.
- Transfer the rollups to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through.
- Remove toothpicks, slice if desired, and serve warm.
