  • 1 tsp Onion powder
  • 1 tsp Dried oregano
  • 1 tsp Cayenne pepper
  • 1 tsp Smoked paprika

Instructions

  1. Prepare the chicken by cleaning and drying the pieces. Mix buttermilk, egg, salt, black pepper, garlic powder, and cayenne in a bowl. Submerge the chicken, cover, and refrigerate for at least 4 hours or overnight.
  2. In a separate bowl, combine flour, cornstarch, baking powder, salt, black pepper, garlic powder, celery salt, onion powder, dried oregano, cayenne, and smoked paprika. Mix well.
  3. Heat oil in a deep frying pan to 350°F (175°C).
  4. Coat each piece of marinated chicken in the flour mixture, ensuring a thick crust.
  5. Fry the chicken in batches for about 8-10 minutes per side until golden brown and crispy. Ensure it reaches an internal temperature of 165°F (75°C).
  6. Drain on a wire rack or paper towels and let rest before serving.
