Instructions
- Prepare the chicken by cleaning and drying the pieces. Mix buttermilk, egg, salt, black pepper, garlic powder, and cayenne in a bowl. Submerge the chicken, cover, and refrigerate for at least 4 hours or overnight.
- In a separate bowl, combine flour, cornstarch, baking powder, salt, black pepper, garlic powder, celery salt, onion powder, dried oregano, cayenne, and smoked paprika. Mix well.
- Heat oil in a deep frying pan to 350°F (175°C).
- Coat each piece of marinated chicken in the flour mixture, ensuring a thick crust.
- Fry the chicken in batches for about 8-10 minutes per side until golden brown and crispy. Ensure it reaches an internal temperature of 165°F (75°C).
- Drain on a wire rack or paper towels and let rest before serving.
