Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C) and grease a baking dish.
  2. Pat the chicken thighs dry using paper towels.
  3. Drizzle the chicken thighs with olive oil and toss to coat.
  4. Mix the salt, pepper, garlic powder, paprika, and thyme in a small bowl.
  5. Rub the spice blend over all sides of the chicken thighs.
  6. Arrange the seasoned chicken thighs skin-side up in the prepared baking dish.
  7. Bake uncovered for 35 to 40 minutes, or until the internal temperature reaches 175°F (80°C).
  8. Switch to broil for an additional 2 to 3 minutes for extra crispiness.
  9. Let the chicken rest for 5 minutes before serving.

Notes

For best results, do not skip drying the chicken and ensure to space them evenly in the baking dish.
