Ingredients

  • 2 cups grated hash browns
  • 1 cup diced ham
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a muffin tin with cooking spray or oil.
  2. Combine the grated hash browns with a pinch of salt and pepper in a large bowl. Press the mixture into the bottom and up the sides of each muffin cup to form a crust.
  3. Bake the hash brown crusts in the preheated oven for about 15 minutes, or until golden brown and crispy.
  4. Whisk together the eggs and milk in another bowl, seasoning with salt and pepper.
  5. Fill each hash brown cup with diced ham and shredded cheese, then pour the egg mixture over the top until just full.
