Instructions
- Preheat the oven to 400°F (200°C). Grease a muffin tin with cooking spray or oil.
- Combine the grated hash browns with a pinch of salt and pepper in a large bowl. Press the mixture into the bottom and up the sides of each muffin cup to form a crust.
- Bake the hash brown crusts in the preheated oven for about 15 minutes, or until golden brown and crispy.
- Whisk together the eggs and milk in another bowl, seasoning with salt and pepper.
- Fill each hash brown cup with diced ham and shredded cheese, then pour the egg mixture over the top until just full.
- Return to the oven and bake for an additional 15-20 minutes, or until the egg is set and lightly browned.
- Allow to cool slightly before removing from the muffin tin. Serve warm or store in the refrigerator for up to 5 days.
