- 1 pound gnocchi
- 2 tablespoons olive oil
- 4 cups fresh spinach
- 4 ounces feta cheese, crumbled
- 2 cloves garlic, minced
- Salt to taste
- Black pepper to taste
- 1 teaspoon red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes. Remove with a slotted spoon and set aside.
- Heat olive oil in a frying pan over medium-high heat. Add the boiled gnocchi and brown undisturbed for 2-3 minutes.
- Gently stir the gnocchi to crisp all sides, cooking for another 2-3 minutes.
- Reduce heat to medium, add minced garlic, and sauté until fragrant, about 1 minute.
- Add fresh spinach and stir until wilted, about 2-3 minutes.
- Season with salt, black pepper, and red pepper flakes. Stir and remove from heat.
- Stir in crumbled feta cheese and serve immediately.
Notes
For best results, use fresh spinach and high-quality feta cheese. Avoid overcrowding the pan when frying the gnocchi.
