Description

Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cups fresh spinach
  • 4 ounces feta cheese, crumbled
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes. Remove with a slotted spoon and set aside.
  2. Heat olive oil in a frying pan over medium-high heat. Add the boiled gnocchi and brown undisturbed for 2-3 minutes.
  3. Gently stir the gnocchi to crisp all sides, cooking for another 2-3 minutes.
  4. Reduce heat to medium, add minced garlic, and sauté until fragrant, about 1 minute.
  5. Add fresh spinach and stir until wilted, about 2-3 minutes.
  6. Season with salt, black pepper, and red pepper flakes. Stir and remove from heat.
  7. Stir in crumbled feta cheese and serve immediately.

Notes

For best results, use fresh spinach and high-quality feta cheese. Avoid overcrowding the pan when frying the gnocchi.
