- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Marinate the chicken breasts in dill pickle juice for at least 1 hour, or up to overnight in the refrigerator.
- Preheat the oven to 400°F (200°C).
- Combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper in a shallow dish.
- Remove chicken from pickle juice and let excess marinade drip off.
- Dredge each piece of chicken in the breadcrumb mixture, pressing to adhere.
- Place the coated chicken on a baking sheet lined with parchment paper.
- Lightly spray or drizzle olive oil over the chicken.
- Bake for 25-30 minutes or until the chicken is cooked through and the coating is golden brown and crispy.
