Description

Delicious taquitos filled with seasoned beef and melted cheese, wrapped in crunchy corn tortillas.


Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon taco seasoning
  • 1012 small corn tortillas
  • Cooking spray or olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning, and season with salt and pepper to taste.
  4. Add shredded cheese, mixing well.
  5. Warm the tortillas in a dry skillet or in the microwave to make them pliable.
  6. Place a few tablespoons of the beef and cheese mixture in the center of each tortilla, roll tightly, and place seam-side down on a baking sheet.
  7. Spray the taquitos lightly with cooking spray or brush with olive oil.
  8. Bake in the preheated oven for about 15-20 minutes, or until golden and crunchy.
  9. Serve hot with your favorite salsa or dipping sauce.

Notes

For best results, warm tortillas before filling and rolling to avoid cracking.
