Delightful taquitos filled with seasoned ground beef and melted cheese, wrapped in crispy tortillas.
Ingredients

- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon taco seasoning
- 10–12 small corn tortillas
- Cooking spray or olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
- Stir in taco seasoning and season with salt and pepper to taste.
- Remove from heat and add shredded cheese, mixing well.
- Warm the tortillas in a dry skillet or in the microwave to make them pliable.
- Place a few tablespoons of the beef and cheese mixture in the center of each tortilla, roll tightly, and place seam-side down on a baking sheet.
- Lightly spray the taquitos with cooking spray or brush with olive oil.
- Bake in the preheated oven for about 15-20 minutes, or until golden and crunchy.
- Serve hot with your favorite salsa or dipping sauce.
Notes
For extra flavor, you can serve these taquitos with salsa, guacamole, or a side of Mexican rice.
